Champagne

Only sparkling wines produced in the Champagne region of France may be so named. Utilizing a process called "Methode Champenoise", it begins like any other wine, but upon bottling extra yeast and sugar is added to produce secondary fermentation. Predominant grapes are Chardonnay, Pinot Noir and Pinot Meunier.
